Chicken is a delicate dish to make. It can dry out very fast if it’s not properly prepared, and a few minutes too long on the heat can take the bird from tender and juicy to dry and dull.

This week, Nyama Mama’s Chef Les will be making an oven grilled chicken, sautè sweet potatoes and avocado salad. A recipe you’d want to try out.

Sweet potatoes are an affordable and nutritious accompaniment to pair with the oven-grilled chicken. In fact, in this recipe, Chef Les will show us how possible it is to throw the chicken and sweet potatoes in one pot, in this case, one oven tray.

The ingredients

Grilled Chicken, Sautè Sweet Potatoes & Avocado salad

  • 2 full chicken (500g each)
  • 2 garlic cloves
  • 1 bunch of rosemary
  • 2 bunches of Parsley
  • 1 bunch of coriander (Dhania)
  • 1 (ripe?) orange
  • 1 teaspoon of paprika
  • 4 medium sized sweet potatoes
  • 25ml vegetable oil
  • 1/4 cup of butter
  • 1 avocado
  • 2 red onions
  • 1 tomato
  • Salt and black pepper (to taste)

Sautè Sweet Potatoes

  • 4 medium sized sweet potatoes
  • 1 bunch of coriander (Dhania)
  • 1 red onion
  • Salt and Black pepper (to taste)

Guacamole

  • 1 avocado
  • 1 red onion
  • 1 tomato
  • 1/4 a bunch of parsley
  • Salt and black pepper (to taste)
